As followers of Christ, we often suffer not because we are out of God's will but because we are in it, not because we lack faith but because we have faith. We suffer not because we need to be filled with the Spirit but because we already are. Stronger faith does not mean less suffering, but more suffering means stronger faith. Scallops with Chilli And Lime Sauce

INGREDIENTS

185 g Green beans; chopped
185 g Snow peas
1/4 c Dry white wine
500 g Scallops
3 tb Olive oil
2 tb Lime juice
2 tb Red wine vinegar
1 tb Fresh dill; finely chopped
1 ts Chilli paste
Freshly ground black pepper; to taste

INSTRUCTIONS

LIME SAUCE
1. Steam or microwave beans and snow peas until just tender. Drain. Refresh
under cold running water. Drain again and set aside.
2. Place wine and scallops in a saucepan. Cook for 3 minutes or until
scallops just turn opaque. Using a slotted spoon, remove scallops and set
aside.
3. To make sauce, place oil, lime juice, vinegar, dill, chilli paste and
black pepper to taste in a screw top jar. Shake well to combine.
4. Arrange beans, snow peas and scallops on a serving platter or individual
plates and spoon sauce over.
