Seafood And Mushroom Pasta with Orange

INGREDIENTS

375 g Cod fillet; (12oz)
375 ml Milk; (12floz)
Salt and freshly ground black pepper
250 g Pasta shells; (8oz)
25 g Butter; (1oz)
175 g Mushrooms; thickly sliced
; (6oz)
25 g Plain flour; (1oz)
Grated rind and juice of 1/2 orange
1 tb Freshly chopped parsley
125 g Large prawns; (4oz)

INSTRUCTIONS

Place the cod in a saucepan with the milk and season to taste. Bring to the
boil and simmer gently for 6-8 minutes.
Drain fish and reserve the milk. Remove the skin from the cod and flake the
flesh into a bowl.
Cook the pasta following the instructions on the pack and drain.
Meanwhile, melt the butter and fry the mushrooms for 2-3 minutes. Stir in
the flour and cook for 1 minutes. Gradually stir in the milk and simmer
gently for 1 minute until thick and smooth.
Stir the prawns, orange rind and juice and cooked pasta into the sauce and
heat through thoroughly. Transfer to a warmed serving dish and sprinkle
with parsley. Serve immediately.
