INGREDIENTS

2 tb White vinegar
2 tb Yellow mustard
2 tb Olive oil
1/2 c Plain yogurt
1 tb Prepared horseradish
1 pn Sugar
Salt and pepper; to taste
1/2 Red leaf lettuce head; leaves torn
Into large pieces
1 Butter leaf lettuce head; leaves torn
Into large pieces
8 Tomato wedges
1/2 Cucumber; peeled, sliced thin
12 oz Salmon fillets; smoked and flaked

INSTRUCTIONS

In a bowl, whisk together vinegar and mustard. Add olive oil while
whisking, then add yogurt, horseradish and sugar. Season with salt and
pepper. In a large bowl, toss dressing with remaining ingredients. Serves
6.
