INGREDIENTS

1 c Long grain rice
1 ts Salt
2 c Boiling water
1 ts Cinnamon
1/4 c Raisins
1/4 c Chopped spring onions
1/4 c Roasted pinenuts
2 tb Chopped coriander

INSTRUCTIONS

In a large microwave-proof jug, place rice, salt, boiling water cinnamon,
raisins and spring onions.
Microwave covered on high for 12 minutes.
Stand 5 minutes.
Toss through pinenuts and coriander.
Fork through prior to serving.
