Spring Pea Salad

INGREDIENTS

10 oz Fresh or Frozen Peas
1 c Celery; diced
1 c Cauliflower; chopped
1/4 c Green or Spring Onion; thinly sliced
2 tb Pimiento; chopped
1 c Cashews; chopped
1/4 c Cooked Bacon; crumbled
1/2 c Sour Cream
1 c Prepared Ranch Salad Dressing
1/2 ts Dijon Mustard
1 sm Clove Garlic; minced

INSTRUCTIONS

Rinse the fresh or frozen peas in hot water and drain thoroughly.
In a large mixing bowl, combine the peas with the celery, cauliflower,
green onion, pimiento, cashews, and bacon. Mix in the sour cream.
In a separate mixing bowl, whisk together the Ranch salad dressing, Dijon
mustard, and garlic.
Pour the mixture over the vegetables and toss gently to blend.
Refrigerate until serving time.
