INGREDIENTS

1 pk Glass noodles; soaked in cold
; water
Black fungus; soaked in cold
; water
Sliced fresh/reconstituted shiitake
; mushrooms
Shredded chilli
Salt and pepper
Fish sauce
1 pk Spring roll wrappers

INSTRUCTIONS

Snip the noodles into 3cm lengths with scissors and season with chilli,
salt and pepper and fish sauce. Onto a wrapper, place a large pinch of
noodles, some fungus and shiitake. Fold corner to corner and bring in the
sides. Moisten and fasten into a cylinder.
Deep fry, drain and serve.
