INGREDIENTS

2 lg Cukes; peeled, (if there is wax on it) and thinly sliced
3 Green onions; thinly sliced with 3 inches of green tops
2/3 c Rice vinegar
1/3 c Sugar; ( I use fructose- so maybe a 1/4 cup is okay)

INSTRUCTIONS

Combine ingredients; marinade for at least a half hour and serve. Serves 4.
Per Serving: 47 calories, .07g protein, 12g carbohydrates, 1.2g fiber, 0.2g
fat, 4 mg sodium.
