Sweet Potato Bread Pudding

INGREDIENTS

1 1/4 lb Sweet potatoes; peeled & chopped
2 c Raisins
1/4 c Dark rum
5 Egg; slightly beaten
1/2 c Sugar
1 qt Whipping cream
2 c Half-and-half
2 tb Dark syrup or molasses
1 tb Cinnamon
3 cups powdered sugar
1 egg yoke

INSTRUCTIONS

~ Steam sweet potatoes and set aside - soak raisins in rum - mix eggs and
next 5 ingredients; add bread pieces, sweet potatoes and raisins Bake in
TWO 11 x 7 x 1 1/2 dishes at 350 for one hour or until set
*************************** Rum Sauce
1 1/2    cup butter
1/4    cup dark rum
Melt butter, stir in rum; add powdered sugar, whip until smooth. Stir in
egg yoke, cook 5 minutes and serve warm.
