Sweet Tomato And Bell Pepper Chutney

INGREDIENTS

4 tb Olive oil
3 Onions; chopped
2 Red peppers; deseeded, skinned
; and chopped
1 Clove garlic; crushed
2 Green peppers; deseeded, skinned
; and chopped
450 g Tomatoes; skinned and chopped
1 ts Gregg's Ground Ginger
1/2 ts Gregg's Mixed Spice
1 ts Ground Gregg's Allspice
170 g Sugar
150 ml White wine vinegar
115 g Raisins

INSTRUCTIONS

Saut. the onions in the olive oil for about 30 secs.
Add the green peppers, garlic, red peppers and the spices. Stir well.
In a separate saucepan heat the vinegar and sugar together for about 40
secs until the sugar is dissolved.
Add the raisins to the vinegar and sugar, stir then combine the two
mixtures in one saucepan. Simmer for about two hours, stirring
occasionally.
Pour into a clean, dry jar.
Cover and refrigerate.
