Social ethics must never be substituted for personal ethics. Crusading can easily become a dodge for facing up to one's lack of personal morality. INGREDIENTS

40 g Butter
2 Oranges; (grated rind in a
; separate bowl)
2 tb Caster sugar; plus 1 tsp
4 Ready-made pancakes
2 tb Brandy
Single cream; to serve
Icing sugar; orange slices and
; fresh
Mint leaves; to decorate

INSTRUCTIONS

1 Place the butter, orange rind and 2 tbsp caster sugar in a large frying
pan, squeeze in the orange juice and heat gently, stirring occasionally
until the sugar dissolves.
2 Place the pancakes on top of each other and roll up. Cut into 1cm wide
strips and add to the pan. Stir together to warm through, then push to the
side of the pan and increase the heat.
3 Sprinkle the remaining sugar onto the space in the pan and when the sugar
begins to melt and bubble, pour over the brandy are carefully ignite.
4 Let the flames subside and divide between plates. Drizzle over cream,
decorate with sugar and mint and serve.
TIPS: Make your own pancakes or classic crepes Suzette. Use creme fraiche,
extra thick cream, vanilla cream etc.
