INGREDIENTS

1 lg Roast chicken
1 Green apple; cut into
; matchsticks
1 Spanish onion; finely sliced
1 Red capsicum; finely sliced
2 tb Shredded coconut
3 tb Sultanas
3 tb Mayonnaise
3 tb Creme fraiche; (sour cream)
3 tb Olive oil
1 tb Mustard; (or mustard powder)
2 tb Curry powder
1/4 c Boiling water

INSTRUCTIONS

FOR THE DRESSING
Remove the chicken from the bones and shred or cut into fine strips or
chunks. Place the chicken in a large bowl with the apple, onions slices,
capsicum, sultanas and coconut. Mix well.
For the dressing, whisk all the ingredients together until well combined.
Pour over the chicken mixture and toss until the dressing is well
distributed and has coated all the chicken.
Chill until ready to serve. Garnish with capsicums and coconut.
