Thai Cucumber Salad

INGREDIENTS

1 lg Cucumber; peeled and sliced
1/4 ts Salt
1/2 c White vinegar
1/3 c Sugar
1/4 c Water
1 sm Green chile; thinly sliced
1/4 c Cilantro; minced

INSTRUCTIONS

Peel and seed cucumber; slice very thinly. Sprinkle with salt and set aside
for 30 mins.
Drain the cucumbers well & place in a serving bowl.
In a small saucepan, make a dressing by heating vinegar, water & sugar.
Remove from heat & add the green chile slices. Cool.
Pour the dressing over the cucumbers & garnish with cilantro. Serve cold or
at room temperature.
