Most of us find comfort in being told that we are going to go on living; [the apostle] Paul was comforted when he was told that he would soon be dying [see Philippians 1:21]! He kept referring to death as that which was 'far better.' The fact that we don't view death with optimism just might be because we think of death as taking us from our home rather than bringing is to our home! Unlike Paul, we have become so attached to our tent that we just don't want to move.

Tomato Basil Soup

INGREDIENTS

2 cn Diced tomatoes; about 3-cups
; (14oz.)
2 c Light and tangy v8 juice
1 c Low sodium chicken or vegetable broth
14 Fresh basil leaves; some for garnish,
; up to 16
1 1/4 c Evaporated skim milk
2 tb Light margarine
2 tb Light sour cream
2 tb Grated parmesan cheese
1 pk Dry butter buds
Salt and pepper; to taste

INSTRUCTIONS

COMBINE tomatoes, V8 juice, and broth in sauce pan.
SIMMER over medium heat for 30 minutes.
TRANSFER mixture (a little at a time) to food processor or blender and add
basil.
BLEND mixture until smooth. Return mixture to sauce pan.
Cook over low heat.
Stir in evaporated milk, margarine, sour cream, cheese, and Butter Buds.
Add salt and pepper to taste.
Garnish with basil leaves.
