INGREDIENTS

1/2 sm Red onion
2 tb Extra virgin olive oil
1 Clove garlic
10 Ripe tomatoes
1 sm Tin plum tomatoes
150 ml Water; (1/4 pint)
1/2 ts Caster sugar
1 Handful golden majoram leaves
Freshly ground salt and black pepper

INSTRUCTIONS

Heat the oil in a large pan and add all prepared ingredients. Cook until
soft. Puree in a blender until smooth. Pass through a non reactive sieve
and discard any debris. Reheat and reduce down until thickened. Check
seasoning and adjust if necessary.
