INGREDIENTS

1 tb Olive oil
1 Clove garlic; crushed
4 Turkey breast fillets
1 Onion; chopped
1 Red pepper; sliced
1 237 gram can chopped tomatoes; (8.1oz)
2 tb Tomato puree
6 Black olives; halved
Salt and freshly ground black pepper
2 tb Freshly chopped parsley

INSTRUCTIONS

1. Heat the oil and fry the garlic, turkey breasts and onion for 4-5
minutes, stirring occasionally.
2. Add the pepper, tomatoes, tomato puree, olives and seasoning and cook
for a further 4-5 minutes. Transfer to a warmed serving plate and sprinkle
with freshly chopped parsley.
