Increasingly our world is short on thinking and long on experience. Mix this with inner turmoil and a desperate need for answers from some higher source, along with the infiltration of eastern religions, and you can easily see why the mystical aspects of our culture are so predominant. Our generation would certainly far rather load all of their information in a computer and forget the agony on thinking, especially thinking biblically.

Waldorf Salad

INGREDIENTS

2 Firm ripe green apples
1 Firm ripe red apple
1 tb Lemon juice
1 c Sliced celery
1/2 c Walnuts; coarsely chopped
1/2 c Mayonnaise
1 1/2 ts Honey; (optional)
Iceberg or bibb lettuce leaves

INSTRUCTIONS

Core and quarter the apples (leave the skin on unless it's tough) and slice
thinly. Put in a bowl and toss with the lemon juice to coat. Add the celery
and walnuts. Cover and chill.
Mix the mayonnaise and honey (if you like a little sweetness in the
dressing) together until smooth; add to the apple mixture and toss. Serve
on a bed of lettuce. Makes 4 servings
