Warm Breaded Chicken Salad

INGREDIENTS

1 Recipe Warm Breaded Chicken; (see previous
; recipe) 1 recipe
1 Head curly endive; (about 8 cups/2L) 1
1 Bulb fennel; thinly sliced (raw,
; grilled or roasted)

2 c Cherry tomatoes 500 mL
1 c Black olives 250 mL
2 tb Red wine vinegar 25 mL
1/4 c Extra virgin olive oil 50 mL
Salt and pepper to taste
1/4 c Chopped fresh basil 50 mL

INSTRUCTIONS

SALAD
Break lettuce into 2"/5cm pieces and combine with fennel, cherry tomatoes
and olives. Prepare dressing by combining red wine vinegar with olive oil,
salt and pepper.
When ready to serve, combine dressing with salad in a large flat serving
dish. Place chicken on top. Sprinkle with basil. Serve chicken hot or at
room temperature.

is also delicious served on its own. Makes 6 to 8 servings
