Whipped Mashed Potato with Goat’s Cheese And Bacon

INGREDIENTS

1 lb Potatoes
Salt and freshly ground black pepper
2 tb Extra virgin olive oil
6 oz Goat's cheese; softest available
3 oz Lean bacon; finely diced
1 oz Butter
1 Clove garlic; peeled and crushed
2 tb Snipped chives

INSTRUCTIONS

1 Cook the potatoes in boiling salted water, drain and return to the pan on
a low heat. Mash to a puree. Heat the butter in a frying pan, add the
bacon, garlic and chives, and cook with the bacon till crisp.
2 Add the olive oil and goat's cheese to the pureed potatoes and, using a
wooden spoon, beat until light and fluffy. Season with salt and pepper, mix
in the bacon mixture and serve.
