If there lurks in most modern minds the notion that to desire our own good and earnestly hope for the enjoyment of it is a bad thing, I submit that this notion has crept in from Kant and the Stoics and is no part of the Christian faith. Indeed, if we consider the unblushing promises of reward and the staggering nature of the rewards promised in the Gospels, it would seem that Our Lord finds our desires not too strong, but too weak. We are half-hearted creatures, fooling around with drink and sex and ambition when infinite joy is offered us, like an ignorant child who wants to go on making mud pies in the slum because he cannot imagine what is meant by the offer of a holiday at the sea. We are far too easily pleased.

Apple-lovage Chutney

INGREDIENTS

6 c Apples, cored and chopped
1 c Lovage, fresh
1 Sweet red pepper, cored
Seeded and chopped
1 Red tomato, cored peeled
Chopped
1 Green tomato, cored chopped
1 Onion, peeled and chopped
3 Garlic cloves, minced
1 c Golden raisins
1/4 c Fresh ginger, peeled minced
1 c Light brown sugar, packed
1 c White wine vinegar
1 T Mustard seeds
1 t Celery seeds

INSTRUCTIONS

Combine all ingredients in non-reactive pan. Bring to boil over
med-high heat, stirring constantly. Reduce heat to med-low and  simmer,
uncovered, stirring frequently, for 45 mins, or until  thickened.
Prepare jars, lids and boiling water bath. Fill jars with hot mixture,
leaving 1/4 inch headspace. Wipe rims with clean towel and attach lids
securely.  Place jars in boiling water bath, and when the water returns
