Arugula And Red Onion Salad

INGREDIENTS

3/4 lb Arugula leaves
1 Size red onion cut into
Thin slices
1 t Finely chopped garlic
1 T Red-wine vinegar
3 T Olive oil
Salt and fresh ground
Pepper

INSTRUCTIONS

Pick over the arugula leaves and remove and discard any tough stems.
Rinse and drain the leaves. Pat dry. Place the leaves in a salad  bowl.
Add the onion slices, garlic, vinegar, oil, salt and pepper.  Toss and
