Bean Threads With Assorted Vegetables

INGREDIENTS

2 oz Bean threads
1 T Vegetable oil
2 Cloves garlic, minced
4 Dried shiitake or Chinese
black mushrooms soaked
and
julienned see

4 c Finely shredded napa cabbage
1 Celery rib, julienned
1 Carrot, julienned
1 c Vegetable broth
1 T Soy sauce
1 Whole green onion, minced
1 t Dark sesame oil, see
glossary
White pepper

INSTRUCTIONS

Soak bean threads in very hot water for 5 minutes, until they're soft
and translucent. Drain in cold water and cut into 3-inch pieces. 2.
Heat wok or large skillet over high heat. Add vegetable oil and
stir-fry garlic until aromatic, about 30 seconds. Add mushrooms,
cabbage, celery, and carrot and cook for 2 to 3 minutes, stirring
occasionally. 3. Add bean threads and vegetable broth and cook until
most of the broth evaporates, approximately 5 minutes. Add soy sauce
and green onions; mix well. Drizzle with sesame oil and add white
