Blt In Bibb Lettuce Cups

INGREDIENTS

4 Tomatoes, seeded and chopped
fine about 2 cups
1/2 c Finely diced smoked
mozzarella
1/4 c Finely shredded arugula
leaves
6 Bacon, cooked until crisp
and crumbled
1/4 c Finely chopped sweet onion
2 T Olive oil
2 t Balsamic vinegar
24 Outer bibb lettuce leaves
about 4 heads washed
and
patted dry

INSTRUCTIONS

In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion,
olive oil, vinegar, and salt and pepper to taste. Spoon mixture into
lettuce leaves and serve immediately.  Yield: 24 hors d'oeuvres  Recipe
