Blueberry-orange Maui Muffins

INGREDIENTS

1/3 c Oat bran
1 c Flour
1 c Oats
1/2 c Brown sugar
1 T Baking powder
1/2 t Salt
1/2 t Cinnamon, or to taste
1 c Nonfat milk
2 Eggs whites, beaten
3 T Oil
1 c Fresh blueberries
1 T Grated orange peel, or
fresh orange slices
1/2 t Vanilla

INSTRUCTIONS

These muffins are delicious.  Preheat the oven to 425F. Combine the oat
bran, flour, oats, brown  sugar, baking powder, salt and cinnamon in a
bowl. Mix. Add the milk,  egg whites and oil. Stir until moist. Fold in
the fruits and vanilla.  Spray a muffin tin with nonstick spray and
fill cup two thirds full.  Bake for 25 minutes. Makes nine muffins.
