INGREDIENTS
1 | Ripe pineapple, peeled | |
cored sliced 1" thick | ||
1 | c | Brown sugar |
1 | t | Ground cinnamon |
1/2 | t | Pure vanilla extract |
1/2 | c | Meyers's dark rum |
INSTRUCTIONS
Place the pinapple slices in a baking pan that will fit under the broiler. Combine the sugar, cinnamon, and cloves and sprinkle over the pinapple. Broil until tender and somewhat caramelized. Remove the pineapple to a serving platter. Combine the vanilla and rum and pour into the pan over low heat, on top of the stove, loosening any brown bits with a spoon. Pour the rum syrup over the pineapple. Serve warm.
