INGREDIENTS

2 c Sugar
3/4 c Water
3 T Butter or margarine
1/2 t Grated orange rind
1/2 t Grated lemon rind
3 Sticks cinnamon
1/4 t Nutmeg
6 Louisiana yams, fresh or
canned cooked peeled &
halved
6 Lemon slices
1 Apple, cored & sliced

INSTRUCTIONS

Combine sugar, water, butter or margarine, rinds, cinnamon and  nutmeg.
Heat to boiling point over medium heat; cook 5 minutes.  Meanwhile,
arrange yams, lemon slices and apple in a 1 1/2-quart  casserole. Pour
syrup mixture over other ingredients. Bake in  moderate oven (350
degrees) for 30 minutes, basting occasionally with  syrup.  NOTES :
