Cardamom-oatmeal Wafers

INGREDIENTS

1 c Sifted whole wheat pastry
flour
1/2 c Granulated sugar cane juice
or brown sugar
1/2 c Rolled oats
1 t Crushed cardamom seeds or
ground cardamom
1/4 t Baking soda
3 T Diced chilled unsalted
butter or margarine
1 oz Semi-sweet chocolate, melted
for garnish optional

INSTRUCTIONS

(Michelle Kay, Toronto, Ontario,  Canada) Cardamom: the flavour is a
cross between lemon zest and  eucalyptus. Is available at Indian and
Middle Eastern grocery stores.  This is a great low-fat snack!!!!
Pre-heat oven to 350 degrees. Spray 8 by 11 inch or 9 by 12 inch
baking dish with cooking spray. Combine all ingredients except butter
and chocolate in a food processor. Pulse to mix and pulverize oats.
Add butter and process until mixture is crumbly. Sprinkle evenly into
pan. With the back of a large spatula or with your fingers, press
dough evenly and firmly into pan.  Bake until golden, 17-20 minutes.
Cut into 1 1/4 inch squares while hot.  Cool in pan on rack. To
garnish, drizzle melted chocolate over cookies.  4 cookies per serving,
makes ~4-1/2 dozen; per serving: 24 calories,  0.5g protein, 0.8g fat,
4g carbo, 2mg chol, 13mg sodium, 0g fiber  DAVE
