INGREDIENTS

1 Piel de Sapo melon, scooped
into balls
or cut into cubes
375 g Cooked chicken, cubed 12oz
75 g Mange-tout, blanched 3oz
4 Salad onions, thinly sliced
diagonally
1 Ripe avocado, cubed
1 Red pepper, finely sliced
Dressing-
1 T Clear honey
2 T Lemon juice
3 T Olive oil
Salt and freshly ground
pepper

INSTRUCTIONS

Place the melon, chicken, mange-tout, salad onions, avocado and
seasoning to taste, in a bowl. Blend the dressing ingredients  together
and stir into the salad, mixing well. Serve chilled.  Converted by
