INGREDIENTS

4 c Butter, divided
1 lb Apple, tart peeled cored
1 c Cashews, coarsely chopped
1 t Sugar
3 c Hard cider
1 Chicken, cut up

INSTRUCTIONS

Saut# chicken lightly in 1/2 cup of the butter. Place apples in a
buttered shallow baking dish; top with chicken and sprinkle with nuts
and sugar. Add cider; dot with remaining butter. Cover. Bake in
preheated moderate oven (375 F.) until tender, about 45 minutes.  Makes
