Green Onion Salad Dressing For Cajun Potato Salad

INGREDIENTS

1 Egg + 1 egg yolk
1 1/8 c Vegetable oil
1/2 c Finely chopped green onions
1 1/2 T Creole or brown ustard
1 T White vinegar
1/4 t Salt
1/8 t White pepper

INSTRUCTIONS

Blend the egg and egg yolk in food processor or blender until frothy,
about 2 minutes. With the machine on, gradually add the oil in a thin
stream. When the mixture is thick and creamy, add the remaining
ingredients and blend thoroughly. Refrigerate until ready to use.
