Green Tomato And Sausage Casserole

INGREDIENTS

1 T Butter or oil
1 c Green tomatoes, in 1/2"
pieces
1 T Chopped parsley
1 Onion, coarsely chopped
2 Green chiles, sliced
optional
1 Carrot, sliced or chopped
8 oz Smoked sausage, thinly
sliced
1 c Rice
2 c Chicken broth

INSTRUCTIONS

Saute onion, green tomato, chiles and carrot in butter or oil for a
few minutes. Transfer to a 2 1/2 qt casserole. Stir in rice, sausage,
and parsley. Heat broth to boiling and add to casserole. Cover  tightly
and bake at 350 F for about 40 minutes or till rice is done  and liquid
is absorbed. Check after about 30 minutes and add a little  additional
broth or water if it seems too dry. Makes about 4 servings.  NOTES :
Wieners or franks can be used in place of sausage.  Recipe by: Mardi
