Honey-carrot-date Muffins

INGREDIENTS

1/4	c	Butter or margarine
1/2	c	Honey
1/2	c	Milk
2		Eggs
1 1/2	c	Flour
1	t	heaping baking powder
1	t	Salt
1	c	Grated carrots
1	c	Pitted chopped dates

INSTRUCTIONS

Melt butter & honey, stir in eggs & milk & beat. Combine dry
ingredients & stir thoroughly. Add to wet mix until just combined,
fold in carrots & dates. Bake at 375Ã¸F for 15-20 mins. Makes 10  large
muffins. Delicious when heated & served with butter, cream  cheese or
