INGREDIENTS
2 | c | Dried prunes, cooked |
Mashed | ||
2 | t | Lemon juice |
1 | ds | Salt |
1 | t | Lemon zest |
4 | T | Powdered sugar |
4 | Egg whites |
INSTRUCTIONS
Pit prunes and mash. Blend in lemon peel and lemon juice, 2 tablespoons sugar and salt. To stiffly beaten egg whites, add remaining sugar, beating until mixed well. Fold in prune mixture gently. Pile lightly into 1-1/2 quart baking dish. Bake at 350 degrees for 20-30 minutes or until knife inserted in center comes out clean. Serve warm with custard sauce if desired.
