Orange Pudding : Tapioca Pudding With Oranges (ada)

INGREDIENTS

1/2 c Pearl tapioca
2 1/2 c Water
1/4 c Sugar
1 Orange: peeled, sectioned

INSTRUCTIONS

Preparation time: only 5 minutes  Combine the tapioca with 1/2 cup of
the water and the sugar. Mix  well, then let stand for 2 hours. Boil 2
cups of water and add the  tapioca mixture. Cook until tapioca is
creamy, about 2-3 minutes. Add  the orange sections and cook for 2
minutes.  Makes 6 servings, each 1/2 cup. Exchanges: 1 1/2
