INGREDIENTS

1/4 c Smooth peanut butter
1 T Soy sauce
1 T Fresh lemon juice
1 Clove, small garlic minced
1/4 t Dried hot pepper flakes, or
to taste
1/4 t Sugar
1/4 c Hot water
6 oz Spaghetti
1 Cucumber, peeled halved
seeded cut diagonally
into
1/8" slices
1/3 c Thinly sliced scallion
Salt and pepper, to taste

blender to mix peanut butter soy sauce, lemon juice, garlic,  pepper
flakes, sugar and water until the sauce is smooth. In a kettle  of
boiling salted water, boil the spaghetti until it is just tender.
Drain and rinse briefly under cold water. Drain well, transfer to a
bowl. Toss with the sauce, cuke, and scallions. S&P to taste. Serve
