But few of us use it so wisely as to produce a tenfold return. The parable recognizes different abilities; the servant with less capacity but equal faithfulness received the same reward. Orzo With Spinach And Feta Cheese

INGREDIENTS

1 c Orzo pasta
1 1/4 t Olive oil
3/4 Onion, minced
7 oz Frozen chopped spinach
thawed and well drained
2 T Feta cheese, plus 2 tsp.
crumbled
Freshly ground black pepper
to taste

INSTRUCTIONS

Cook the orzo according to package directions. Drain. Heat the oil in
a skillet over medium high heat. Add the onion and saut for 5  minutes.
Add the spinach and saut for 4 more minutes. Toss the onion  spinach
mixture with the hot orzo. Add the feta cheese and ground  pepper and
toss well. Serve immediately.  Per serving: calories 177, fat 6.0g, 30%
calories from fat,  cholesterol 17mg, protein 7.7g, carbohydrates
23.8g, fiber 2.5g,  sodium 256mg.  Exchanges: 2 1/2 Starch.  Source:
