For my own part, I have never ceased to rejoice that God has appointed me to such an office. People talk of the sacrifice I have made in spending so much of my life in Africa. Is that a sacrifice which brings its own blest reward in healthful activity, the consciousness of doing good, peace of mind, and a bright hope of a glorious destiny hereafter? Away with the word sacrifice. Say rather it is a privilege. Anxiety, sickness, suffering, or danger, now and then, with a foregoing of the common conveniences and charities of this life, may make us pause, and cause the spirit to waver, and the soul to sink; but let this only be for a moment. All these are nothing when compared with the glory which shall be revealed in and for us. I never made a sacrifice.

Pilau Rice With Mushrooms

500 g Pilau rice
300 g Mushrooms
130 g Butter
700 g Broth, prepared from cubes
1 Onion, 120 gr.
1/2 Glass of white whine
A pinch, 0.2 grams of
saffron powder

newsdesk@aznewslink.com  Cook 300 gr. of thinly chopped mushrooms
together with 80 gr. of  butter, till the water from the mushrooms
evaporates (7-8 minutes).  Cut 1 onion in thin slices and cook it with
50 gr. of butter at low  heat, without browning it, in a heat-resistant
casserole. After 5-6  minutes add the saffron and mix it. Then add the
rice, mix again for  2 minutes, add the wine, and pour the broth over
the rice. As soon as  it comes to the boil, put the casserole into the
pre-heated oven  (180°-200°C) for exactly 15 minutes. The rice will
absorb the  broth. Then remove the rice from the oven and add the
mushrooms,  mixing them well. A little more butter may also be added at
this  time. For a special presentation, the dish may be decorated with
small grilled würstels on spits.  on Mar 16, 1998
