INGREDIENTS

4 Eating apples, peeled cored

cut into medium
chunks
3 T Caster sugar
4 Cloves
1/2 t Ground cinnamon
1/2 Lemon, juice of
200 g Fresh brown breadcrumbs
grated fine 7oz
4 T Brown demerara sugar
90 g Unsalted butter, 3oz

INSTRUCTIONS

This is Nick's up-market adaptation of the traditional Scandinavian
dessert called 'Peasant Girl in a Veil'. It is basically layers of an
apple spiced pure with browned, sweetened, breadcrumbs and some
whipped cream. It sounds a very basic idea -and it is! But it has a
delicious simple taste and is a cinch to make. We have adapted the
apple sauce by adding spices to Nosh it up!  The idea of this dessert
is to layer the breadcrumbs with stewed  apple. For the apple sauce,
cook the apple in caster sugar and lemon  juice with the cloves and
cinnamon until soft but not slushy. Allow  to cool (adjust the sugar if
necessary - it should taste slightly  tart).  Brown the breadcrumbs in
the melted butter and brown sugar, until  they turn crunchy and dark
brown with the sugar. Keep the heat on low  to medium to prevent
burning and keep the mixture moving in the pan  to prevent sticking.
Allow to cool.  Fill flute or cocktail wine glasses with alternative
layers of apple  and crumbs (about half an inch thick each) and top off
