Kitfo (steak Tartare)

INGREDIENTS

1/4 c Niter kebbeh
1/2 c Onions, chopped fine
4 t Green pepper, chopped
Fine
2 t Chiles, chopped fine
1 t Ground ginger
1/2 t Garlic, chopped fine
1/2 t Ground cardamom
1 t Lemon juice
2 t Berbere or awaze
2 t Salt
2 lb Ground round steak

INSTRUCTIONS

In a large skillet, melt the niter kebbeh over low heat.  Add onions,
green pepper, chiles, ginger, garlic, and cardamom.  Raise heat to
med. and cook 2 min., stirring constantly.  Place mixture in a bowl
and cool for 15 min. Stir in lemon juice, berbere and salt.  Stir in
raw beef and mix thoroughly.  Serve with injera, breads, or crackers.
Kitfo can also be stuffed in split Italian frying peppers and served
