No evangelical, I think, need hesitate to admit that in his heart of hearts he would like universalism to be true. Who can take pleasure in the thought of people being eternally lost? If you want to see folk damned, there is something wrong with you! Universalism is thus a comfortable doctrine in a way that alternatives are not. But wishful thinking, based on a craving for comfort and a reluctance to believe that some of God’s truth might be tragic, is no sure index of reality.

Mushroom And Sweet Pepper Quiche

INGREDIENTS

2 t Olive oil
1 Onion, chopped
1 Green pepper, chopped
2 1/2 c Sliced mushrooms
2 Garlic cloves, minced
2 lb Medium-firm tofu
2 T Nutritional yeast
1 t Salt

INSTRUCTIONS

Heat oil in a medium sized skillet & saute vegetables & garlic till
limp. In a large bowl, crumble or mash tofu. Add sauteed vegetables,
yeast & salt.  Pre-heat oven to 350F.  Spread tofu mixture evenly into
a 9 1/2" or  10" quiche pan.  Bake for 30 to 40 minutes, till the edges
start to  brown. Garnish with tomatoes.  "Vegetarian Times" March, 1992
