INGREDIENTS

1 Duck, 3 to 4 pounds
Water to cover
1 #2 sliced pineapple
2 T Soy sauce
1 t Salt
1 ds Pepper

INSTRUCTIONS

Wipe duck inside and out with a damp cloth. Place breast-side up in a
heavy pan. Add cold water to cover and bring to a boil; then simmer,
covered, 1 hour. Drain liquid from pineapple and add to duck, along
with soy sauce, salt and pepper. Simmer, covered, 30 minutes more.  Add
pineapple slices during last 10    minutes of cooking.  From <The
