Rice With Snow Peas And Red Pepper

INGREDIENTS

2 c Chicken stock
2 T Soya sauce
1 1/2 t Minced ginger root, or 1/2
tsp. ground ginger
1 Garlic, minced
1 c Long-grain white rice
2 c Snow peas, cut into 1 inch
diagonal pieces-about 8
oz.
Half red bell pepper, diced
3 Green onions, chopped
1 t Toasted sesame oil, opt

INSTRUCTIONS

In a medium saucepan, combine stock, soya sauce, ginger and garlic;
bring to a boil.  Stir in rice; reduce heat to low, cover and simmer
for 20 minutes or until rice is just tender.  Add snow peas, red pepper
and green onions.  Cook, covered, for 5  minutes more or until
vegetables are tender-crisp.  Stir in sesame  oil, if using. Yield: 4
