Romaine With Orange Cumin Dressing

INGREDIENTS

1/4 t Cumin seeds, scant
1 t Whitewine vinegar
1 t Orange juice
1/4 t Freshly grated orange zest
Salt and pepper
2 T Olive oil
4 c Bitesize pieces romaine
washed and spun dry

INSTRUCTIONS

In a small heavy dry skillet toast cumin seeds over moderate heat,
swirling skillet, until fragrant, about 30 seconds. In a serving bowl
whisk together cumin seeds, vinegar, orange juice, zest, and salt and
pepper to taste and add oil, whisking until emulsified. Add romaine
and toss to coat with dressing.  Yield: 2 servings  Converted by
