INGREDIENTS

1 1/2 c Salmon, 15 1/2ozfirmly
Packed, minced
1/4 c Cracker crumbs
1/4 t Salt
2 Eggs, unbeaten
1 Egg slightly beaten
Cracker crumbs
1 c Canned peas, drained
2 c White sauce, medium thick or
Cheese sauce
Salt and pepper to taste

INSTRUCTIONS

Combine first 4 ingredients and mix well with fork. Shape into 6
uniform croquettes , dip in beaten egg, and roll in cracker crumbs.
Fry in deep fat (360-375F) until golden brown, about 10 minutes. Add
peas to hot sauce, season to suit taste, and pour around the

Beers  NOTE: I usually make patties. Then you don't have to deep-fry.
Just  put a little oil in a skillet and fry until golden brown. We also
put  worcestershire sauce on them when I serve them without the sauce
