Sausage Chilaquiles (casserole)

INGREDIENTS

1 lb Hot Italian Sausage
1 T Oil
6 Corn tortillas
3 c Harissa Sauce, see #44
4 c Grated cheddar cheese

INSTRUCTIONS

Preheat oven to 350 F.  Slice open the sausage casings and remove the
meat. In large skillet, brown sausage, breaking it up with a spoon as
it cooks. Drain and set aside  Heat 1 tbs. oil in a skillet, briefly
fry tortillas in the oil until  softened, abt. 1 min. on one side & 1/2
min. on other. Cut tortillas  into strips (kitchen shears are best).
Spoon a little sauce into the bottom of a 2 qt. baking dish. Arrange a
layer of tortilla strips on top. Then layer on some sausage, then a
generous coating of cheese. Repeat untill all ingreds. are used,
ending with a layer of cheese.  Bake for 30 min, until the cheese is
melted and golden.  Allow the casserole to sit for abt. 5 min. before
serving. Pass extra salsa and sour cream at the table.  From Gemini's
