INGREDIENTS

1 454 gram pac Cumberland
sausages
1 T Olive oil
1 Onion, chopped
1 Clove garlic, crushed
1 400 gram can chopped
tomatoes
2 T Sundried tomato sauce
Salt and freshly ground
black pepper
2 T Freshly chopped parsley
750 g Potatoes, cooked and sliced
1 1/2lb
15 g Butter, melted 1/2oz

INSTRUCTIONS

Grill the sausages following instructions on the pack.  Heat the oil in
a saucepan and cook the onion and garlic for 5-6  minutes, stirring
occasionally. Stir in the canned tomatoes, sundried  tomato sauce,
seasoning and most of the parsley. Bring to the boil  and simmer for
5-6 minutes.  Arrange the cooked sausages in a single layer in an
ovenproof dish.  Pour over the tomato sauce.  Preheat the oven to 200
C, 400 F, Gas Mark 6.  Arrange the potato slices over the sauce and
brush with melted butter.  Place in the preheated oven for 20-25
minutes until the potatoes are  golden. For an extra crispy top, place
under a preheated hot grill  for 2-3 minutes. Sprinkle over the
remianing chopped parsley before  serving.  Converted by MC_Buster.
