Eggs Appetizer 4 Servings

INGREDIENTS

1/4 c Flour
1 t Salt
1 t White/black pepper
1 c Shucked oysters, 10-12
3 T Olive oil
1 T Sesame oil
1 T Minced ginger
1/4 c Chopped scallions, white and
green parts
1 T Chile, I used Serranoes may
want to use more
2 T Soy sauce
4 Eggs, lightly beaten
Salt and pepper to taste

<kaufman@biosci.cbs.umn.edu> just had the best  breakfast I've had in
awhile and thought I'd share it with you... er  the recipe anyways. ;>
It is from 'Big Flavors of the Hot Sun'. I forget the authors and
can't look it up since I sent it to my sister for her b-day.  Serves 4
as an appetizer  Dredge oysters in first three ingrediants and fry in
oil. Fry for 2-3  minutes or until lightly browned. Set aside. Cook
ginger, scallions  and chile in the oil for 1 minute. Add soy to egg
and scramble with  the other ingrediants. Add dash of Frank's or
Tabasco if desired.  Yummmm! Though I think it would have gone better
with a nice lager or  pilsn, rather than the coffee I had <shrug>. I
halved the above recipe  which worked perfectly for one for breakfast.
