INGREDIENTS
1 | lb | Chinese noodles |
1 1/2 | T | Oriental sesame oil |
1 | Cucumber, shredded | |
4 | oz | Baked ham, shredded |
1/2 | t | Salt |
8 | oz | Cooked chicken |
1 | Carrot, shredded | |
1 1/2 | T | Toasted sesame seeds |
3 | T | Soy sauce |
1 1/2 | T | Vinegar |
1 | t | Sugar |
1/2 | c | Chicken stock |
3/4 | t | Tabasco |
3 | T | Scallions, chopped |
1 1/2 | T | Sesame oil |
INSTRUCTIONS
Preparation : Bring a large kettle of water to a boil; add 1/2 tsp.salt and the noo-dles. Boil 1 1/2 minutes, until the noodles are just done. Drain and rinse with cold water to cool. Drain well and toss with 1 1/2 Tb. ses-ame oil. Mix the ingredients for the sauce and set aside. Shred the chicken, ham and vegetables. To serve, place the noodles on a platter. Surround with the meats and vegetables. Top with the sauce and sprinkle with the toasted sesame seeds.
