Spicy Sausage And Vegetable Frittata

INGREDIENTS

8 oz Hot Italian Sausage, casings
removed
1 Zucchini, Diced
1 Red or green bell pepper
Diced
6 Eggs
1 c Shredded mozzarella cheese

INSTRUCTIONS

Crumble sausage into a 10-inch nonstick skillet. Cook over medium  heat
2 to 3 minutes until no pink remains. Add zucchini and bell  pepper.
Cook about 5 minutes, stirring often until vegetables are  tender.
Whisk eggs in a large bowl. Stir in cheese. Pour over mixture  in
skillet and stir gently to distribute eggs evenly. Cook 4 to 6  minutes
until set on bottom and sides (eggs will be runny in center).  If
skillet handle is plastic or wood, wrap in foil to prevent  scorching.
Broil fritatta 4 to 6 inches from heat source, 3 minutes  or until firm
