Tomato-onion Soup

INGREDIENTS

2 Onion, diced
2 Leek, sliced thin
1 Garlic clove, pressed
4 c Water
8 Tomato, chopped
2 T Parsley sprigs, chopped
2 t Thyme
1 Bay leaf
1 t Basil
1 T Tamari soy sauce, low
Sodium

INSTRUCTIONS

Saute onions, leeks, and garlic in 1/2 cup water until transparent
(about 15 minutes). Add the remaining 3 1/2 cups of water, the
tomatoes, parsley, thyme, basil, and the bay leaf. Simmer, covered,
over low heat for 60 minutes. Remove cover; simmer for 30 minutes
longer. Add tamari just before serving.  HELPFUL HINTS: This soup is
great with fresh, homemade bread. Add a  green salad fro an interesting
meal. A large can of tomatoes (28  ounces) may be substituted for fresh
