Two-potato Oven Fries

INGREDIENTS

2 Baking potatoes
1 Sweet potato
1 Egg white
1 T Chili powder
1 t Ground red pepper, optional

INSTRUCTIONS

Ruth Nicolosi of Novato adapted this recipe from Prevention magazine.
Cut unpeeled baking and sweet potatoes into thin fries.  Beat the egg
white in a large bowl until foamy.  Stir in chili powder and pepper.
Add potatoes and toss to coat well.  Spread potatoes in a single layer
on a nonstick cookie sheet or a  regular cookie sheet coated with
no-stick spray.  Bake at 450 degrees F. for 30 to 35 minutes, or until
potatoes are  crisp and brown.  PER SERVING: 230 calories, 6 g protein,
52 g carbohydrate, 1 g fat, 0  mg cholesterol, 51 mg sodium, 6 g fiber.
